Deconstructed Tacos

Ingredients:

  • 1 lb ground beef
  • Taco seasoning:
    • 1 tablespoon chili powder
    • 1 teaspoon ground flaxseed
    • 2 teaspoons ground cumin
    • 1/2 teaspoon salt
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon sweet paprika
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon ground turmeric
  • ¼ cup water
  • Spelt with ground flaxseed and turmeric
  • Sour cream
  • Grape tomatoes
  • Carrots
  • Tortilla chips
  • Babybel cheese

 

Directions:

  1. In a small bowl mix all the spices for the taco seasoning. Set it aside. 
  2. Heat a large skillet over medium heat. Add the ground beef and cook it by stirring and breaking it apart. Cook the beef until it is completely browned and cooked through. 
  3. Drain and discard any excess grease. Pour the homemade taco seasoning and stir to cook for a few seconds. Add 1/4 cup of filtered water and stir to combine. Bring to a simmer and cook until the moisture absorbs into the meat, about 2-4 minutes.
  4. Mix together taco beef and spelt in a bowl, then add to the thermos.
  5. Pack with sides of sour cream, tomatoes, carrots, tortilla chips, and cheese.
