DIY Nachos

Use leftover taco beef to send a DIY nacho lunch they'll have fun assembling!

 

Ingredients:

  • 1/2 lb ground beef
  • 1/2 packet taco seasoning
  • 1/3 cup water
  • Shredded Mexican blend cheese
  • Shredded lettuce
  • Salsa
  • Greek yogurt
  • Avocado
  • Lime juice
  • Salt
  • Tortilla chips

 

Directions:

  1. Brown the ground beef in a frying pan over medium-high heat, then drain any excess grease. Sprinkle in the taco seasoning and add water, stir to combine, then simmer until the sauce is thickened.
  2. Mash the avocado in a bowl with lime juice and salt.
  3. Pack taco beef in the thermos, topped with shredded cheese.
  4. Add mashed avocado, Greek yogurt, and salsa to OmieDip containers and pack in the side compartments, along with shredded lettuce.
  5. Pack tortilla chips in a separate snack container.
  6. Don't forget the utensils!
