Heart-Shaped Caprese Sandwich + Salad
Surprise your kiddo with a Valentine's Day themed lunch! You can make this even if you don't own a heart-shaped sandwich cutter.
Ingredients:
- Cherry tomatoes
- Mozzarella pearls
- Extra virgin olive oil
- Balsamic vinegar
- Salt
- Sourdough sandwich bread
- Fresh mozzarella, sliced
- Vine tomato, sliced
- Fresh basil leaves
- Yogurt covered pretzels
Directions:
- First, make the caprese salad. Combine cherry tomatoes and mozzarella pearls in a bowl, then drizzle with olive oil and balsamic. Add a pinch of salt and stir to combine.
- Next, make the sandwich. Add a layer of mozzarella to one piece of bread. Add a large tomato slice on top, then add a layer of basil leaves. Close the sandwich with another piece of bread.
- To cut the sandwich into a heart shape without a sandwich cutter, use a sharp knife to slice an elongated arc from the middle of the top edge of the sandwich down to the middle of the bottom edge. Repeat on the opposite side of the sandwich, so you end up with a rounded triangle shape. Then, on the flat edge that was the top of the sandwich, cut out a small triangle to finish making the heart shape.
- Remove the thermos from your OmieBox UP and pack the sandwich in the square compartment.
- Add the salad and pretzels to the side compartment. Remember to add the ice pack underneath the tray to keep the salad cool.
